Introduction

UNIFOAM AZ-E is food grade Azodicarbonamide FCC synthesized, from the synthesis precursors until the product final, under ISO-9002 Norms (SGS Yarkey ICS-UK).

Function
UNIFOAM AZ-E is a quick action oxidizer that acts on the sulfhydryl groups of the gluten forming disulfur bridges. This way it conditions and reinforces the structure of the doughs made with flours of poor content of gluten. In the Fig. 1 are shown the outline of reaction of the UNIFOAM AZ-E.

Uses
UNIFOAM AZ-E is commonly used as flour improver. Doughs carried out with flours treated with UNIFOAM AZ-E possess a more cohesive structure, they tolerate better absorption of water and this is finally translated in a better texture and crumb volume. UNIFOAM AZ-E is not bleach and it doesn't destroy vitamins that the flour has. Therefore the UNIFOAM AZ-E is ideal to replace other quick action aditives that are less acceptable as alimentary preservatives. UNIFOAM AZ-E doesn't react with dry flour. Neither deterioration is observed during the storage with flour. UNIFOAM AZ-E acts in quick form when entering the flour in contact with the water during the kneading.
